Way to hack the sealer! Fiddling with stuff helps.
I was P.O.ed about wasting so much of these vacuum sealing bags for so long I had to just accept it. I heartily agree with Jim that this is a great hack for the sealer. Can't wait to check it out.

The question about N2 were a little crazy as the air is composed of almost 80% of N2. So it seems quite logical it isn't a problem for seeds.
I have a really cheap vacuum sealer (I bought it for less than $50), and you can choose to suck air or just use it as a sealer (no trick needed, lol). And there is a button to select if you want SIMPLE seals or DOUBLE seals, to be able to cut between the 2 seals. So it's done with just 1 operation.
I'm pretty sure you have a far more expensive vacuum sealer which does things more automatically, but it's actually worse than a really cheap one for your use 🙁

If you had this foodsaver, it is no problem sealing a bag without the vacuum coming on. The top button is for sealing only. the bottom button is for vacuum and sealing a bag.
If you let the new seal cool for 3 or 4 seconds after the seal is made, it makes a far superior seal over simply removing it immediately after sealing.
And this Foodsaver has a dual vacuum pump and it runs on 12 or 120 volt.
