Soft Shell Crabs are AVAILABLE today in Vietnam, alive and healthy.

So what are soft shell crabs??

They the same species as the mud crab, but upon shredding their skin. They are harvested before the new shell hadderns. Tech savvy farrmers usually placed this newly moulted crabs in water with low salinity to prevent the formation of the shell which is predominately CaC03
